Chef Tay Chan Yong and his culinary team from The Cave will work in tandem with The Laguna Bali’s F&B department to present an exceptional dining experience, featuring Chef Chan’s signature menu showcasing international cuisines with an Asian fusion twist. Chef Chan has had an illustrious career with Ritz-Carlton, culminating in his appointment as chef de partie, before moving on to serve as a sous chef for over five years at the renowned Tippling Club. These valuable experiences have helped Chef Chan emerge as a rising star on the island. “Discipline is the most important aspect to uphold standards and gain even greater achievements. With everything I have learned so far, I want to be of good use to the team and lead them to achieve all our goals,” says Chef Chan.
As you stroll through the beautiful natural surroundings to the waterfront at Nusa Bagus Island, Chef Chan and his team will be crafting an array of tantalizing dishes, including the Tuna taco, with a crispy tortilla wrapped around salmon ikura, and the coveted 48-hour Short rib – a prime quality short rib slow-cooked at a low temperature for 48 hours and served to perfection.
